Ingredients for Pelmeni Dough:
3 cup all-purpose flour
1 cup of boiling water
1 egg
3 tb spoons of olive oil
0.5 tea spoons of salt
Ingredients for Pelmeni Filling:
1 lb ground turkey/pork or chicken
1 lb ground beef
1 medium onion, finely diced (I prefer mine processed in food processor)
3 garlic cloves, pressed or processed in food processor
1/2 tsp ground pepper
3/4 tsp salt
Directions
In a big bowl mix sifted flour, egg, salt and oil. Mix through well using your hands or a stand mixer (use hook attachment). Add boiling water and mix the dough with hook or your hands. Be extremely careful if mixing with your hands: wear gloves as the dough will be very hot. Cover the dough with plastic wrap and let it rest on a counter for 15-30 minutes.
Prepare pelmeni filling.
Roll the dough out on the working surface dusted with flour, cut out app 1.5 inches circles, place a teaspoon of meat on each circle and shape the dumpling.
Place pelmeni onto a well-floured cutting board. Arrange pelmeni evenly on the cutting board, sprinkle with flour and place in the freezer.

To Cook Pelmeni:
Bring a pot of water to boil (add salt, bay leaves, black pepper). Add FROZEN pelmeni and get to boiling again. They should float to the top, then boil for 3 minutes more (or until meat is fully cooked). Drain pelmeni and place them in a bowl. Toss pelmeni with butter and sprinkle with dill (optional). Serve pelmeni with warm with ketchup, sour cream or vinegar.
