Borsch is one of the most well-known Slavic foods. It is a beet soup made with many other vegetables. This version is made with beef, potatoes, cabbage, lots of aromatic vegetables and is served with fresh herbs and sour cream. We are presenting you authentic Ukrainian Borscht recipe.
Ingredients:
● Chicken boneless skinless thighs (or you can choose other meat; you might like pork chops)
● 4 medium shaped potatoes
● 3 medium beets; ● 2 medium carrots
● 1 onion
● ½ head of cabbage
● 3 medium tomatoes
● 1 red pepper
● ½ teaspoon of black pepper
● ½ teaspoon of red pepper
● 1 teaspoon of sugar
● Lemon juice
● Olive oil
● 3-4 teaspoon of ketchup or 1/4 cup tomato paste
● Salt
Toppings:
● Sour cream
● Fresh minced dill weed
Optional toppings: ● Fresh cloves of peeled garlic; ● Rye bread; ● Slices of lard (pork fat).
Instructions: ● Add water to the pot and bring it to a boil
● Put thighs (whole pieces or cut in small chunks) in a boiling water then lower the heat to a simmer
● Cook the meat for at least 30 minutes
● Cube potatoes and put into the soup pot
● Peel and slice beets. Put slices in a dish, sprinkle some lemon juice and let them stand for 10 minutes
● Prepare your veggies: dice an onion, grate carrots on a large grater, dice tomatoes, slice a cabbage
● Heat a frying pan, add some olive oil and put in it grated carrots,slices of beets and chopped onion. Saute it for 5 minutes,stirring occasionally until soft and add ketchup
● All the veggies put into the soup pot, cook it for 10 minutes
● Add sliced cabbage into the soup pot
● Take a frying pan again, put chopped red pepper and tomatoes. Saute for 3-5 minutes, stirring occasionally and put everything into the soup pot
● Cook over medium heat for 25-30 minutes
● Add salt and pepper, taste the soup and make sure you have enough
● Chop fresh dill and put it at the very end, immediately cover and remove from heat. Let the pot rest covered for 20 minutes for the flavors to meld. Notes: You can also put some fresh white beans(soaked in a water the whole night before) and put at the beginning or just white beans from a can almost at the end of the cooking. Also, you can add green peas in the middle of the cooking.
