Romanian Stuffed peppers (Ardei Umpluti) are a favorite meal in many parts of the world. They are easy to make and delicious. That’s a perfect meal for the whole family, kids can definitely help with cooking and tasting!
ingredients:
6 bell peppers
1 pound ground beef or pork
1 onion
1 can tomato sauce
3 tablespoons rice
1 tablespoon olive oil
Sour cream for serving
Fresh parsley
Directions: 1. Wash and cut the top part of the bell peppers, retaining the tops. 2. Remove the seeds. 3. Heat the oil and sauté the onion 2-3 min 4. Add the rice and stir for another minute 5. In a large bowl mix the meat, the sautéed rice & onion, parsley (keeping a few leaves for garnish). 6. Add salt and pepper to taste, a dash of paprika. 7. Stuff the peppers 3/4 full with the meat mixture and place in a large pot ( Note the rice will expand). 8. Add water to almost cover the peppers as well as one can of tomato sauce. You can add one teaspoon of sugar to the sauce, but that is optional. 9. Set to cook for 45 min on low heat. 10. Serve with sour cream on top and garnish with remaining parsley.
